2015 Thank God It’s Friday

Both the Cabernet and Merlot were grown on our Heysen Estate Vineyard using organic practices. The fruit for the Cabernet and Merlot came from the original 1997 plantings. The Cabernet sits on a south-east facing slope with lots of broken quartz in the soil- my favourite site on the vineyard, while the Merlot is planted on deep biscay and dark clay soil, giving the wine a nice dark berry character.
Fermented using wild yeast in small open fermenters, this wine was foot stomped to allow gentle extraction of colour, flavour and tannins. After 10 days on skins the wine was basket pressed and put to old French and American oak for 18 months. The wine was blended and bottled with no fining and no filtration.
This classic blend shows aromas of dark fruits, cassis, fresh sage and freshly turned earth. The palate is light and fresh, bursting with fruit and finishing smooth with lingering tannins drawing the wine across the palate. This wine is a modern take on a traditional blend, and is perfect for any day, not just a Friday!
