2016 Mathilda Louise
Made up of Mataro (52%) and Grenache (48%) grown here on our Heysen Estate vineyard, using organic practices. These vines sit side-by-side on a West-facing slope that was planted in 2001 by Martin & Chris Pfeiffer. The westerly aspect of this block gives the wine a lovely sweet berry character, which is perfectly suited to rosé.
Harvested during the night when the temperature is at its coolest, the fruit is destemmed in the vineyard stored in a cold room for 48 hours to allow the colour to seep out of the skins. The juice is then pressed away from the skins, and fermented at low temperatures using wild yeast until the desired level of sweetness is reached. The ferment is then chilled down to zero, racked and sulphur is then added to stop the ferment.
Pretty pink in colour suggesting that there is some sweetness in this wine, aromas of strawberries and cream jump out of the glass. This off-dry rosé has loads of fresh raspberry and strawberry flavours on the palate, and it is a perfect match to spicy food. Named after my Great, Great Grandmother- Mathilda Louise Pfeiffer.
