Grown on our Estate at Whistler Wines, Seppeltsfield Road, Marananga, Barossa Valley.
Clone D3V14 planted in 1997 on dark loam and biscay soils, 100m south-east of our Cellar Door building.
The grapes were left on the vine until late April, reaching maximum sugar levels before being harvested and sent to Peter Kenelly at Old Kapunda Distillery. The wine was fermented on skins until it reached the the desired sugar level. We then added neutral SVR spirit to the ferment to stop the fermentation and bump the alcohol level up to 18%. A small amount of sulphur was then added to ensure the wine was protected during maturation before being transferred to barrel. The barrels were then stored outside in our scrub and were exposed to the sun, wind, rain and frost, which essentially speeds up the ageing process of the wine. This 2014 vintage was matured in barrel until November 2018, before being hand bottled and released in May 2019.
Luscious caramel brown colour with aromas of burnt fig, caramel, toffee and Christmas cake. The palate is long and sweet, with loads of fruit and toffee characters. This wine is the perfect way to end a nice meal, or have a glass around the fire. Once opened, this wine will last for up to six months. It is a Tawny style fortified, which means that the ageing process has occurred in barrel, so it is bottled and released when it is drinking at its best, which means there is no need to cellar this wine.
Drinking well now, all of the ageing has been carried out in barrel for you to enjoy the wine at its best. Once opened, the wine will be ok for up to six months.
